Carrot cake energy bars

Enjoy these energy bars with healthy ingredients. They are very reminiscent of the traditional carrot cake, but much simpler to prepare. The sweet cashew sauce is optional, but it makes it taste even more like the original cake, which usually has a sweet icing. A remorseless pleasure!

Ingredients

For the energy bars

  • 180 g carrot
  • 80 g dates
  • 100 g walnuts
  • 20 g grated coconut
  • 1 teaspoon cinnamon
  • 30 g oat flour
  • 1 teaspoon vanilla essence
  • 20 g maple or agave syrup
  • 2 teaspoons salt

For the cashew sauce

  • 100 g cashew nuts
  • 2 tablespoons maple syrup or agave syrup
  • 1 teaspoon vanilla essence
  • 2 tablespoons vegetable drink
  • 1 tablespoon coconut oil
  • zest of 1 lemon

Instructions

For the bars

  • Preheat the oven to 200ºC.
  • Soak the dates in boiling water for 5 minutes to soften them and remove the stone.
  • Prepare the square or rectangular baking tin with parchment paper or greased with coconut oil.
  • Remove the pits from the soaked dates. Peel and cut the carrots into small pieces.
  • Place the blade accessory in the glass of the Chefbot. Drain the dates and add them to the glass along with the chopped carrots and walnuts. Program 15 seconds on speed 5.
  • Use the spatula to scrape down anything that may have stuck to the walls of the glass.
  • Add the rest of the ingredients for the bars. Program 15 seconds on speed 12. Use the spatula to remove any remaining mixture from the walls of the glass. Program again 10 seconds at speed 12.
  • Pour the batter into the baking tin and flatten the batter with the spatula to make it uniform.
  • Bake in the oven for approximately 20 minutes until it begins to brown.
  • Leave to cool out of the oven before cutting the bars.

For the cashew sauce

  • Soak the cashew nuts in boiling or very hot water for 1 hour. After this time, drain the cashew nuts.
  • Place the blade accessory in the glass of the Chefbot. Pour all the ingredients into the glass and program 4 minutes on speed 4.
  • Use the spatula to scrape down anything that may have stuck to the walls of the glass. Program again 5 minutes at speed 4.
  • The dough should be very creamy and free of lumps. If there are still lumps, repeat and program another minute on speed 5.
  • Serve the sauce on top of the bars. Keep the remaining sauce in the fridge. Can be used as a topping for pancakes, crepes or other cakes.
