Curry lentils with prawns

This vegetable recipe will surprise you with its intense flavour and the combination of lentils and curry is spectacular. In a balanced diet, legumes are indispensable. They are a great source of protein and iron. They also contain essential folic acid for the nervous system. Curry is a mixture of various spices widely used in India and other Asian countries. Among its components, curry contains cardamom, cloves, pepper, turmeric, cumin and coriander, among many other aromas.

Ingredients

  • 150 g onion
  • 170 g green pepper
  • 170 g red pepper
  • 2 cloves of garlic
  • 60 ml extra virgin olive oil
  • 100 ml coconut milk
  • 10 g curry
  • 7 g ground cumin
  • 7 g sweet paprika
  • 1 bay leaf
  • 30 g fried tomato
  • 80 ml white wine
  • 280 g pardina lentils
  • 100 g raw prawns
  • 50 g canned peas
  • 5 g salt

Instructions

  • Put the blade accessory on the Chefbot. Put the onion in quarters, the chopped peppers and the peeled garlic, program 6 seconds at speed 5 and close.
  • Open the Chefbot and, with the help of the spatula, lower any leftovers that may have stuck to the walls. Replace the blade accessory with the stir paddle accessory. Add the oil and salt, program 6 minutes at 110ºC, speed 1 and close
  • Open the Chefbot taking care not to burn yourself and introduce the coconut milk, cumin, curry, paprika, bay leaf, fried tomato and wine. Program 5 minutes at 120ºC, speed 1 and close.
  • Open the Chefbot, add the lentils, cover with water and program 40 minutes at 110ºC, speed 1 and close. Pause halfway through cooking, open the Chefbot and add the peeled prawns and well washed and drained peas and close.
  • If you see that they are getting dry during cooking, add water through the steam outlet cap of the Chefbot.
  • Check if they are done and, if not, reprogram 5 minutes more at 110ºC, speed 1 and close. Serve hot.
