Lentil and mushroom meatballs with tomato sauce

These lentil and mushroom meatballs are the perfect recipe for eating vegetables without hardly noticing them, the spices give them a delicious taste, they are perfect to enjoy with spaghetti.

Ingredients

For the meatballs

  • 175 g onion
  • 7 cloves of garlic
  • 180 g mushrooms
  • 40 ml olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon of salt
  • 1 teaspoon of sweet paprika
  • 1 teaspoon rosemary
  • 1 teaspoon of oregano
  • 1 teaspoon of pepper powder
  • 440 g cooked lentils
  • 150 g oatmeal
  • 50 g dried tomato
  • 50 g flour

For the sauce

  • 175 g onion
  • 1 teaspoon of pepper powder
  • ½ teaspoon salt
  • 1 teaspoon of oregano
  • 40 ml olive oil
  • 725 ml tomato sauce

Instructions

For the meatballs

  • Open the Chefbot, place the blade accessory, add the onion cut into quarters, the garlic cloves and the mushrooms and chop for 10 seconds at speed 6.
  • Open the Chefbot, clean the walls with the spatula, and place the stir paddle accessory.
  • Add the olive oil, cumin, salt, sweet paprika, rosemary and pepper, cook over a low heat at 100°C for 15 minutes at speed 1.
  • Open the Chefbot, remove the stir paddle accessory and insert the blade accessory. Add the cooked lentils, oats and dried tomatoes, chop for 10 seconds at speed 6.
  • Preheat the oven to 200ºC.
  • Place baking paper on an oven tray with the dough you have just prepared, take the amount of one spoonful and shape it with your hands, use the flour to prevent it from sticking to your hands, repeat the process with all the dough.
  • Bake at 200ºC for 20 minutes.

For the sauce

  • To prepare the sauce, open the Chefbot, place the blade accessory, add the onion cut into quarters, and chop for 30 seconds at speed 6.
  • Open the Chefbot, remove the blade accessory and clean any sticky spots on the walls with the spatula.
  • Place the stir paddle accessory, add the pepper, salt, oregano and oil and cook over a low heat at 100°C for 5 minutes at speed 1.
  • Open the Chefbot, add the tomato sauce and cook over a low heat at 100°C for 15 minutes at speed 1.
  • Serve the meatballs with the tomato sauce on top.
