Mexican bean dip

Beans are one of the most popular and widely available vegetables in the world’s cuisine: we can find them in everything from Italian minestrone to Kenyan ghiteri. In Mexico, they are often refried, in a dish prepared with this cooked legume, previously sautéed with onion and some fat (it can be oil or animal fat, for example from pork), which is then usually made, in part, into puree. In this recipe we will turn them into a healthy appetizer that will make us travel to this country, thanks to three very typical dressings: chili, coriander and lime juice. In order not to overdo it with the salt, we have to take into account if the peanuts we are going to use have it or not, since all the salt they bring should not be put by us.

Ingredients

  • 600 g cooked black (berry or red beans)
  • 120 g of roasted peanuts
  • 1 clove of garlic (or to taste)
  • 4 tablespoons of lime juice (60 ml and, if desired, the grated skin)
  • 3 tablespoons of olive oil (45 ml)
  • 3 tablespoons of cold water (45 ml)
  • Fresh or pickled chilli (or hot sauce to taste)
  • Salt to taste
  • Cilantro to taste
  • Cucumber (celery, pepper and carrot crudités and bread sticks to accompany)

Instructions

  • Place the blade accessory in the Chefbot’s glass. Add the 600 g of beans, the 120 g of roasted peanuts, the garlic clove, the 60 ml of lime juice, the 45 ml of oil and the 45 ml of iced water and salt and chilli to taste. Program 45 seconds at speed 8 and close.
  • Open the glass of the Chefbot and push down with the spatula what may have stuck to the walls, taste the spread and adjust the dressings, if necessary. Program 45 seconds at speed 9 and close.
  • Open the Chefbot’s glass and transfer the spread to a bowl, cover it with kitchen film and leave it to stand for at least 30 minutes in the fridge to allow the flavours to blend. Decorate with chopped coriander or a little more paprika and serve, accompanied by vegetable crudités and bread sticks.
