NOODLES WITH ARTICHOKES AND RIBS

This recipe is perfect when we do not have broth to give flavour to the noodles, as we will cook it on the spot while cooking the ribs (so that they are very tender) and the artichokes. We can enhance the combination between this vegetable and this part of the pig, with the flavour that the bone gives it, using it not only in this noodle dish, but also in stews with potatoes or dry rice.

Ingredients

  • 1 medium onion (150 g)
  • 2 cloves of garlic
  • 3 tablespoons of olive oil (45 ml)
  • 4 tablespoons of tomato sauce (60 g)
  • 500 g pork ribs cut into pieces of approximately 3 cm
  • 250 g artichoke hearts in pieces (can be defrosted)
  • 250 g of Noodles Number 2
  • 550 ml water at room temperature
  • 1/2 teaspoon cumin (2 g)
  • Salt
  • Pepper
  • Parsley for decoration (optional)
  • Grated Parmesan or Manchego cheese (optional)

Instructions

  • Place the blade accessory in the Chefbot’s glass. Add the onion peeled and cut in four and the garlic peeled. Set for 8 seconds at speed 6 and close.
  • Open the Chefbot and use the spatula to push down any sticky parts on the walls. Remove the blade accessory and insert the stir paddle accessory. Add the 45 ml of oil and a pinch of salt, set 8 minutes at 110℃, speed 1 and close the glass.
  • Open the Chefbot glass and add the 500 g of seasoned chopped ribs, the 2 g of cumin and the 60 g of fried tomatoes. Settle for 10 minutes at 110℃, speed 1 and close the glass.
  • Open the Chefbot glass and add the 550 ml of water (or do it through the steam outlet cap). Set a time of 20 minutes at 110℃, speed 1 and close the glass.
  • Open the Chefbot glass and add the 250 g of artichoke pieces. Set a time of 17 minutes at 110℃, speed 1, and close the glass.
  • Carefully add the 250 g of noodles from number 2 through the steam outlet cap so that you do not burn yourself. Program 7 minutes to 100℃, speed 1.
  • Leave to stand for two minutes and serve with some grated cured cheese (if desired). Decorate with chopped parsley (optional) and freshly ground pepper.
