SWEET POTATO PUREE

Sweet potato purée is a perfect accompaniment to pork (it is delicious with some sirloin medallions), poultry or to pick up the sauce from veal stews. Instead of steaming the sweet potatoes in the deep steam basket, we can take advantage of it when we go to bake something to put some in, and prepare the puree with them. What do we get by roasting the sweet potato instead of cooking it? That its sugars become caramelised, and it has the delicious and deep flavours that Maillard’s reaction causes (the same one that makes the meat toast when it is put on the fire). In addition, we optimize the use of the oven.

Ingredients

  • 2 large or 3 medium sweet potatoes (about 1k in total)
  • 200 ml milk (unsweetened vegetable drink or 200 g avocado)
  • Salt to taste
  • 60 g butter (olive oil or a mixture of both (or to taste))
  • Pepper to taste
  • 1 pinch of ginger powder (2 g)

Instructions

  • Wash the sweet potatoes well to remove any soil they may have. Put 1 litre of water in the glass of the Chefbot, close it with the deep steam basket and the sweet potatoes inside. Set the steam function (120°C, no speed) for 30 minutes.
  • At the end of the cycle, check carefully not to burn yourself, as steam will come out and they will be very hot, so that the sweet potatoes are soft and cooked. If not, programme 5-minute cycles in the steam function (120ºC, no speed).
  • When the sweet potatoes are ready, take out the deep steam basket, discard any water left in the glass and pour in some water. Let the sweet potatoes cool down until they can be handled, and the glass until the blade accessory can be fitted.
  • When you can, open them in half lengthwise and remove the meat with a spoon. Place it in the Chefbot glass together with the 200 ml of milk, unsweetened vegetable drink or 200 g of avocado. Add salt and pepper to taste and a pinch of ginger powder (2 g). Program 8 seconds at speed 4 and close.
  • Open the glass of the Chefbot and push down with the spatula what may have stuck to the walls. Test to see if the seasoning needs to be corrected and do so if necessary. Add the 60 g of butter, olive oil or a mixture of both, set 6 seconds at speed 4 and close.
  • Open the Chefbot and check that it is at the desired grinding point. If not, program 6-second cycles at speed 4 until you find it. Remove the purée from the glass with the spatula and serve immediately.
