Tahini is a sesame paste (raw, roasted or black) that is widely used in Middle Eastern cooking. Not only is it one of the basic ingredients of hummus, but it is also the main ingredient in the sauce that accompanies shawarma, kebab, kafta and other meat dishes (in this case mixed with garlic, lemon, salt and parsley). It’s not hard to find in supermarkets, but it usually comes in very large formats and, if we don’t eat it often, it can get stale, so preparing it at home is a great option. If we have raw sesame and we want to roast it ourselves (it increases the flavour quite a bit), just put the stir paddle accessory and program 7 minutes at 100ºC, speed 2.

Ingredients

  • 200 g roasted sesame, raw or black
  • 1 tablespoon of mild olive, sesame or sunflower oil (15 ml)

Instructions

  • Place the blade accessory in the Chefbot’s glass. Add the 200 g of sesame seeds, set at speed 8 for 45 seconds and close the glass.
  • Open the glass and, using the spatula, push down what may have stuck to the walls. Add the 15 ml of oil, set at speed 9 for 45 seconds and close the glass.
  • Open the glass and, using the spatula, push down whatever may be stuck to the walls. Set at speed 9 for 45 seconds and close the glass.
  • Open the glass and check whether it has the desired texture (it can be processed more or less, depending on the purpose and personal taste). To adjust it, program 30-second cycles at speed 8 and then lower whatever is stuck to the walls of the glass.
  • When ready, move to an airtight jar and store in the refrigerator.
