A vegan and much lighter version than mayonnaise with egg and oil, with a texture that’s just as great as the original. Ready in two minutes, it lasts several days covered in the fridge. It’s perfect with grilled vegetables and you can add a personal touch with mustard, lime or lemon juice, thin it with water if you want a more liquid texture or the tofu is very dry, or add hot sauce to taste.

Products to prepare it with


  • 250 g firm tofu
  • 60 ml olive oil
  • 45 ml cold water
  • 45 ml lemon juice or mild vinegar
  • Salt to taste

Step by step preparation

  • Place the blade attachment in the workbowl.
  • Add 250 g firm tofu, 60 ml olive oil, 45 ml of cold water,
  • 45 ml lemon juice or mild vinegar and salt to taste.
  • Set for 20 seconds at speed 9 and close.
  • Open the Chefbot and push down any food stuck to the sides with
  • the spatula. Taste and add salt if necessary.
  • Close and blend for 40 seconds at speed 10.
  • Open the Chefbot and check if the tofunnaise has the desired
  • texture. If it’s too thick, add another 30 ml cold water or lemon
  • juice. Push any mixture stuck to the sides down with the spatula.
  • Close and blend for 40 seconds at speed 10.
  • Store in a well-closed container or jar and keep in the fridge.
