Vegan chickpea and chocolate brownie

Vegan brownie is one of the easiest vegan recipes to make. Its sweet taste and fluffy texture makes it a delicious recipe to have on any occasion. This version is made with chickpeas, but if you prefer, you can use other types of legumes such as white beans. It is delicious, easy to make and 100% vegan.

Ingredients

  • 70 g dates (boneless)
  • 200 g cooked chickpeas (can be jarred)
  • 30 g pure defatted cocoa powder
  • 50 g peanut butter
  • 4 g baking powder
  • 5 g vanilla essence
  • 50 g chocolate 85%

Instructions

  • Soak the dates for 30 minutes.
  • Place the blade accessory in the Chefbot’s glass, insert the dates with a little of the soaking water, set at speed 10 for 45 seconds and close. Open the Chefbot and, with the help of the spatula, lower any remains that may have stuck to the walls. Repeat the operation until you get a paste.
  • Open the Chefbot, add the chickpeas, cocoa, peanut butter, yeast and vanilla essence, program 1 minute at speed 10 and close.
  • Open the Chefbot and, with the help of the spatula, lower the remains that may have been stuck to the walls. Reset 1 minute at speed 10 and close. Repeat if there is still a little time left to achieve a homogeneous mass.
  • With the help of the spatula, remove the mass, add the chocolate in pieces and mix. Place on a baking sheet with vegetable paper and bake for 35 minutes at 90ºC.
  • Remove, leave to cool and store in the refrigerator.
