Vegetable moussaka

Moussaka is a traditional Greek dish made from different layers of vegetables such as aubergines, meat or in this recipe textured soya and all covered with a baked bechamel sauce. It is a laborious dish but the result is delicious, reminiscent of lasagna.

Ingredients

  • 340 g potatoes
  • 200 g red onion 2 pieces
  • 120 ml olive oil
  • 5 teaspoons of salt
  • 5 teaspoons of thyme
  • 2 & 1/2 teaspoons of pepper
  • 350 g courgette
  • 200 g textured soya (medium size)
  • 2 cloves of garlic
  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • 400 ml tomato sauce
  • 1 teaspoon of brown sugar or panela
  • 100 g vegan parmesan
  • 300 g vegan bechamel

Instructions

  • We will create different layers first with the potatoes and onion, then with the aubergine, courgette, and textured soy and finally we will add the béchamel and bake everything.
  • Open the Chefbot, place the slicer disc using the large grater, close with the food processor lid and set the food processor function for 10 seconds at speed 5. Add the potatoes and 1 red onion and, once sliced, place them on a baking tray, add 30 ml of oil, 1 teaspoon of salt, ½ teaspoon of pepper and 1 teaspoon of thyme. Mix with a wooden spoon and bake for 20 minutes at 200ºC.
  • After 20 minutes, grate the aubergine in the Chefbot for 10 seconds at speed 5 and create a new layer on the baking tray, add 30 ml of oil, 1 teaspoon of salt, ½ teaspoon of pepper and 1 teaspoon of thyme and bake for 20 minutes at 200°C.
  • Put the textured soya in a bowl, cover with water to soften it.
  • After 20 minutes, grate the courgette in the Chefbot for 10 seconds at speed 5 and create a new layer on the baking tray, add 30 ml of oil, 1 teaspoon of salt, ½ teaspoon of pepper and 1 teaspoon of thyme and bake for 20 minutes at 200°C.
  • Open the Chefbot, insert the blade accessory, add an onion cut into quarters and two cloves of garlic and chop for 10 seconds at speed 6.
  • Place the stir paddle accessory, add 30 ml of olive oil, ½ teaspoon cinnamon, ½ teaspoon cumin and cook over a low heat at 100°C for 5 minutes at speed 1.
  • Open the Chefbot, add the soya, 2 teaspoons salt, 2 teaspoons thyme, 1 teaspoon pepper, 400 ml tomato sauce, 1 teaspoon sugar, and cook over a low heat at 100°C for 20 minutes at speed 1.
  • Open the Chefbot, add 100 g of béchamel sauce, mix it with a spoon and then add this mixture to the baked vegetables.
  • Cover the Moussaka with 200 g of béchamel and bake at 200°C for 30 minutes.
